At home, we’re really leaning into the simple pleasures these days. And for me and my partner this means a big, slow breakfast on the weekends to relax after a busy week. Just because I like to make a big breakfast on the weekends, doesn't mean it needs to be complicated. These pancakes are one of my favorite go-tos! They’re so simple and come together so easily with the zip in a blender. 


I love these more than a traditional pancake, the oats add fiber, nutrients and a lovely texture to these little pancakes and when loaded with toppings like greek yogurt, hemp hearts and coconut butter they help prevent that dreaded sugar crash later in the day.

Easiest Ever Oatmeal Pancakes

Ingredients 

1c milk *I use almond or oat milk 

1c rolled oats

1 medium to large banana 

1/2 tsp baking powder

1 tbsp flax 

1 tsp cinnamon 

¼ tsp salt 

2 Tbsp coconut oil 


Optional Toppings 

Butter or Coconut oil 

Syrup *my favourite is Rainbo Forrest Juice 

Berries or Fruit 

Greek Yogurt 

Nut Butter 

Hemp Hearts 


Directions 

Combine all ingredients except for coconut oil in a blender and blend until smooth. You want the batter to have a pourable consistency, set aside for a moment to thicken up. 


Preheat your  pan on medium low to medium heat. Grease the pan with coconut oil and pour the batter directly from the blender to create pancakes. Make whatever size/ shape you prefer. Cook until bubbles appear in the batter, then flip and cook for another minute or two. Serve with your favorite toppings!
